School Lunch Ideas – Part 2 { Buffalo Chicken Dippers & Veggies in a Jar }

My kids are crazy about these Buffalo Chicken Dippers in a Jar. Even better, it’s a super easy and nutritious school lunch.

Ingredients (for 4 lunches):

2 Chicken breasts, cooked and cut into strips
3 – 4 Carrots, peeled and cut into sticks
4 – 6 Celery stalks, cut into sticks
8 Tbsp Ranch dip (2 per jar)
1-2 Dashes of Louisiana Hot Sauce per jar (optional)

Buffalo Chicken Dippers and Veggies in a Jar

The next time you are making chicken breasts for a meal, cook up a couple of extra and cut into strips.

Fill the bottom of the mason jar with 2 Tbsp of your favourite ranch dip and add a couple of dashes of Louisiana Hot Sauce (optional). Then pack your jar with chicken strips, carrots and celery. Your done! Just like that!

Kids love the novelty of ‘lunch in a jar’, and there is no need to pack an extra container of dipping sauce. If you house is like mine those little bitty sauce containers never come home, and if they do … the lids don’t.

Note: a glass jar may not be appropriate for younger or very energetic children. For Georgia I use a recycled plastic mini peanut-butter jar.

This lunch may be packed the night before and kept refrigerated.

You know what I do all day when, at first glance, I read, “Buffalo Chicken Diapers”. Great idea – I think we’ll give it a try this week!

Great idea! My kids would love it because they love chicken. Although, I’m going to have to find a non-glass alternative. I like the pb jar idea-I may have some tucked away somewhere.

My 6 year old is going to *love* this recipe. She loves to dip anything, chicken, carrots, nacho chips you name it! She would be ok with a small glass jar, so this is going to work perfectly, thank you!
