Real Food – Easy Chicken Spinach and Mushroom Pasta

I made this recipe up to use the fresh and locally grown spinach and mushrooms in my Organic Box delivery. Damn it’s good! It shouldn’t take much more than 12-15 minutes to make (depends on how long it takes the water to boil).

Ingredients:

1-2 chicken breasts (chopped into 1/2 inch slices)
1-1.5 cups of chopped fresh spinach leaves
1 cup of sliced mushrooms (any sort)
1/4 cup of butter
3 large cloves of garlic
1/4 cup of grated parmesan cheese
1 tsp salt
1 tsp pepper
6 cups of cooked pasta of your choice.

Directions:

Put pasta water on to boil.

Now start chopping up the mushrooms, spinach, garlic and chicken.

When water is at a full boil add pasta.

Add butter to a large skillet or wok (wok works best). When butter is melted add chicken and saute. Now add the mushrooms and the garlic to the cooked chicken, saute until tender. Add salt and pepper. When pasta is cooked drain and add to the wok/skillet.

I cooked the works on med-high.

Add 1/2 the parmesan cheese and mix.

Serve immediately sprinkle with remaining parmesan.

Mmm, yum! That looks delicious. I make a similar dish but it’s a risotto (so rice instead of the pasta). Also add lemon zest & juice to mine. But I LOVE the combo of chicken, mushrooms and spinach, and even better with Parmesan on top! I’ll have to try this recipe. Thanks!

Seems obvious, but when do you add the spinach? With the mushrooms?

    @kelli, Makes sure all the other veggies etc. are well cooked and then throw the spinach in and cook it for just a minute or so, then add the pasta. The spinach doesn’t need much cooking at all, when it is bright green I call it done :)

Thank you, very useful. I wasnt actually a big fan of Spinach for many years (ok, that’s a total understatement, I hated the stuff), but after marrying a vegan I kind of had to get used to it, and have slowly come to absolutely love the stuff. Spinach curry is undoubtedly my absolute favouritest! I even found an entire spinach recipes website which is my new favourite site now, you should have a look!

Yes, it does look good and simple. I’m low carbing for the moment so I might try some cauliflower instead of pasta. Probably total destroy it but still worth a shot.

My timing founding this couldn’t have been better. I have some leftover pasta and I was wondering what to do with it. I`ll try this recipe, as soon as I get home. I must print this out, so I won’t forget to buy the ingredients on my way home. I`ll check out some of your other recipes later.
