Real Food – Easy Apple Cake Recipe

A recent drive through the Okanagan, past apple orchard after apple orchard, found me the owner of 200 lbs (YES 200 LBS!) of just picked apples. OK, so I’m not known for my self control, but at less than 40 cents a LB, I couldn’t resist. I’ve also been told that most of the apples sold in the grocery store are from last year’s crop, so I figured I could store them in my basement. My kids LOVE apples and I’m fond of apple desserts. I have a feeling, we’re going to get our fill this fall.

Easy Apple Cake Recipe

Preheat oven to 350 deg F.
Makes about 6 servings.

3-4 medium apples peeled and chopped
1/4 cup of sugar
2 tsp cinnamon

Peel and chop the apples put in a medium sized bowl.

For all of you ‘concerned moms‘ who don’t like me letting my young child use a sharp knife (TOUGH! She’s still doing it).

Add 1/4 cup of sugar and 2 tsp of cinnamon and mix. When all of the apples are evenly coated with the sugar and cinnamon, put them in a greased 8 x 8 baking pan.

1/2 c sugar
3 tbsp butter
1 egg
1/2 tsp vanilla
1 cup flour
1 tsp baking powder
1/2 tsp salt

Mix the ingredients above in medium sized bowl. You should end up with fist sized ball of dough.

It won’t be like cake batter, it’s more like a biscuit dough. I like to roll mine out and then I do my best to spread it evenly over the apples. It doesn’t work very well, but don’t worry it all works out during the baking process.

Bake 35 – 40 minutes.

It’s great served with ice cream, but I didn’t have any.

I have a really good apple crisp recipe that my kids love! If you have more apples than you can use, I’d be happy to buy some off of you. Fresh picked BC apples are the best!

It’s great when you can get your kids involved in kitchen endeavors and other creative processes. It’s fun for the kids (and mommy :-)) and I really think they learn so much from it too. This recipe is great if you happen to have trees with an excess of apples as well.

My mother-in-law used to make a cake very similiar to this. Though, she used vanilla sugar instead of adding vanilla AND sugar. She said it made the flavor a bit more subtle.
