Lemon Drop Sugar Cookies for your next Cookie Exchange

in General, Real Food / Easy Meals

If you are like me, a cookie exchange sounds like a fabulous idea, until the day before, when you have 859 important tasks to accomplish and NO COOKIES made.

If you’re a procrastinator like I am, this recipe using a Betty Crocker Sugar Cookie Mix, is going to be a life-saver.

Lemon Drops are super delicious and a family favourite. Even better… Your friends will never guess all this yummy-ness came from a mix. Shhh … don’t tell!

The recipe below using 1 package of Betty Crocker Sugar Cookie Mix makes 3 dozen small cookies. Multiply as needed for your exchange.

1 pkg of Betty Crocker Sugar Cookie Mix
1 tsp lemon juice
1 tsp of lemon zest
20 crushed lemon drop candies (I use my magic bullet to crush them).

Make the sugar cookies as per the recipe on the back of the package. Mix thoroughly and add the lemon juice, lemon zest and crushed lemon drop candies.

Mix well.

Drop by rounded teaspoonful on a parchment lined cookie sheet. Bake at 350f for 8 to 10 minutes or until edges are very lightly browned. Allow to cool for 5 minutes then move to a wire rack.
